Benefits of CA: Low 02 can delay senescence and reduce respiration. Elevated CO2 delays degreening and can reduce sensitivity to chilling injury.
Benefits of Ethylene Removal: Pineapples are non-climacteric fruits and are not sensitive to ethylene.
Special Treatments Before Shipping: Pineapples may be waxed with a 20% (v/v) paraffin-polyethylene:water mixture to reduce the incidence and severity of internal browning caused by chilling injury.
Mixed Loads: Pineapples readily absorb off-odors from avocados and green peppers. They are neither sensitive to ethylene nor great producers of ethylene. Avoid chilling temperatures.
Cautions: 02 less than 2% can cause off-flavors. C02 greater than 10% can also cause off-flavors. Pineapples do not ripen further after harvest so they should be harvested at least 1/4 to 1/2 yellow. Less mature fruit are more susceptible to chilling injury and should not be kept at less than 10°C while ripe fruit may be held as low as 8°C.
