Benefits of CA: Low O2 reduces the respiration rate. Elevated CO2 helps retain firmness and reduce decay.
Benefits of Ethylene Removal: Strawberries are relatively insensitive to ethylene and produce very little. There are no known benefits to ethylene removal.
Special Treatments Before Shipping: Strawberries deteriorate very rapidly and can be shipped and marketed for only a few weeks at best. To maximize quality and shelf life, strawberries should be rapidly cooled to 0°C and kept at this temperature. Most strawberries shipped from California are encased in plastic pallet shrouds with 15-20% CO2 injected into the shroud following cooling to 0°C.
Varietal Differences: Varietal differences in tolerance to CO2 levels greater than 20% have been documented.
Mixed Loads: Strawberries can be shipped in mixed loads.
Cautions: O2 less than 2% can cause off-flavors. CO2 greater than 25% may cause flesh browning and off-flavors.
