Optimum Relative Humidity: 85-90%
Benefits of CA: Low O2 reduces the respiration rate and the ethylene production rate. Elevated CO2 helps maintain firmness and reduce decay.
Benefits of Ethylene Removal: Figs are slightly sensitive to ethylene and are moderate producers of ethylene. Ethylene may accelerate ripening and so ethylene removal may be beneficial in some instances.
Special Treatments Before Shipping: Fruit should be precooled immediately after harvest to near 0°C and held at that temperature throughout handling.
Varietal Differences: Keeping quality is somewhat dependent upon variety Use of CA to extend postharvest life has been shown for Calimyrna and Mission figs. Benefits have not been documented for other varieties.
Mixed Loads: Keep cold. Can be shipped in mixed loads. However, figs can absorb odors produced by apples and by garlic, onions and leeks so they should not be shipped with these commodities.
Cautions: O2 less than 2% can cause off-flavors. CO2 greater than 15% for more than two weeks may cause loss of flavor.
