Benefits of CA: Low 02 reduces loss of green color and trimming loss and I inhibits growth. Elevated CO2 reduces decay and sprouting.
Benefits of Ethylene Removal: Ethylene concentrations of 10-100 ppm I will cause leaf abscission and loss of green color after several weeks Cabbage produces very little ethylene.
Special Treatments Before Shipping: Keep cabbage cold and at very
high humidity. Less decay develops at 0°C under 98-99% RH than at 95% RH. Cabbage may be packed in perforated plastic liners to maintain high humidity. Maintain good ventilation.
Varietal Differences: Red and Savoy cabbage require similar conditions. However, response to CA varies by cultivar and storage duration. Firmness and chlorophyll of Chinese cabbage are retained at 1% O2 + 1% CO2.
Mixed Loads: Cabbage is sensitive to ethylene and so should not bo shipped with commodities that produce ethylene.
Cautions: O2 less than 2% can cause off-flavors and increased sensitivity to freezing. CO2 greater than 10% can cause discoloration of inner leaves and apex and off-odors. At 0°C, low-oxygen injury may be seen after 2 months in 0.5% 02 or after 6 months in 1.5% O2. CO2 injury may occur after 2 months in 20% and after 6 months in 10% CO2. Relative humidity should be maintained at 97-100%.
