Benefits of CA: CA has not been shown to be beneficial for potatoes. Potatoes have a low respiration rate and store and ship well under ambient atmospheres if temperature, humidity and air movement are suitable.
Benefits of Ethylene Removal: Potatoes produce very little ethylene but are moderately sensitive to the effects of ethylene.
Special Treatments Before Shipping: Table potatoes are normally cured before shipping and storage. Curing by holding at 15-20°C and 90-95% relative humidity for 10-14 days permits suberization and wound periderm formation (healing of cuts and bruises). Proper curing is essential to reducing decay during shipping and handling. In some cases chemical sprouting inhibitors (such as CIPC) may be applied to potatoes after curing. Seed potatoes should not be treated with sprouting inhibitors.
Varietal Differences: There are differences among potato varieties in their postharvest life under the proper handling conditions.
Mixed Loads: Potatoes will confer an earthy flavor to apples and pears so they should not be shipped together.
Cautions: Reduced O2 and elevated CO2 may increase sprout growth so CA should not be used for potatoes. Reduced O2 may restrict the availability of oxygen to the interior of the tubers and result in black heart. To prevent this, low O2 should not be used and good air flow throughout the load should be ensured. Potatoes should not be exposed to light for extended periods because light will induce production of chlorophyll imparting a green color to the skin. This greening is sometimes associated with production of the alkaloid solanine which can impart a bitter taste to the potato.
