Optimum Relative Humidity: 90-95%
Benefits of CA: Low O2 reduces respiration rate and loss of sugars. Elevated CO2 reduces growth of mold on husks and reduces loss of sugar in kernels and chlorophyll from husks. However, modern cultivars with reduced starch forming enzyme benefit little from CA.
Benefits of Ethylene Removal: Sweet corn produces very little ethylene and is relatively insensitive to the effects of ethylene.
Special Treatments Before Shipping: Sugar to starch conversion occurs rapidly after harvest and this process is slowed by cooling to near 0°C. Maintenance of cold temperatures throughout shipping and distribution are of paramount importance.
Varietal Differences: Although the newer super sweet varieties lose sugar more slowly than traditional varieties, cold temperatures are still essential in maintaining quality.
Mixed Loads: Corn will absorb odors from green onions.
Cautions: Oxygen less than 2% and/or CO2 greater than 10% may cause off-flavars and odors.
