Benefits of CA: Low O2reduces respiration and ethylene production and slows ripening. Elevated CO2reduces decay and sugar loss and slows ripening.
Benefits of Ethylene Removal: Cantaloupes produce significant amounts of ethylene and are moderately sensitive to the effects of ethylene. Since cantaloupes will not become sweeter after harvest, exposure to ethylene сат cause them to ripen more rapidly and deplete their sugars thereby reducing their flavor quality. Cantaloupes should not be shipped with ethylene-producing commodities.
Special Treatments Before Shipping: Cantaloupes should be harvested at "lull-slip" maturity for highest quality. They are sensitive to abrasion injury resulting in rapid moisture loss and so should be handled gently. Cool rapidly after harvest to preserve sugars and slow ripening.
Varietal Differences: There are only minor differences among cantaloupe varieties in their postharvest behavior.
Mixed Loads: Cantaloupes are sensitive to ethylene and so should not be shipped with commodities that produce ethylene. They produce substantial amounts of ethylene and so should not be shipped with ethylene-sensitive commodities.
Cautions: O2less than 1% and/or CO2greater than 20% can cause impaired ripening, off-flavors and off-odors. CO2greater than 10% can cause a carbonated taste, but the off-flavor dissipates during subsequent in air storage. Cantaloupes are slightly chilling sensitive. Half-slip to 3/4-slip maturity cantaloupes can be held about 15 days at 2-5°C, but lower temperatures may cause pitting and surface decay. Full-slip maturity cantaloupes may be held up to 15 days at 0-2°C.
