Optimum Relative Humidity: 90-95%
Benefits of CA: Low O2delays senescence and reduces respiration and chlorophyll loss. Elevated CO2is not beneficial to cucumbers.
Benefits of Ethylene Removal: Cucumbers produce very little ethylene but are sensitive to the effects of ambient ethylene which causes rapid yellowing.
Special Treatments Before Shipping: Cucumbers for the fresh market are usually waxed or wrapped in shrink-film to prevent moisture loss and shriveling. Otherwise, they must be kept in 90-95% relative humidity at all times.
Varietal Differences: Cucumber varieties vary in their chilling sensitivity and postharvest life potential.
Mixed Loads: Cucumbers are sensitive to ethylene and so should not be shipped with commodities that produce ethylene. Cucumbers are also chilling sensitive and should not be held at less than 10°C for greater than 2 days, Symptoms of chilling injury are water-soaked spots, pitting, or tissue collapse. Rapid ethylene production and onset of decay will develop in chilled cucumbers after they have been removed from low-temperature conditions.
Cautions: O2less than 1% can cause off-odors, tissue breakdown and increased sensitivity to chilling injury. CO2greater than 10% will increase softening rate and cause surface discoloration and pitting.
