Benefits of CA: Low O2 reduces respiration and delays senescence and descoloration of damaged tissue. Elevated СО2delays decay development and discoloration caused by mechanical injury to the tissue.
Benefits of Ethylene Removal: Celery produces very little ethylene but is somewhat sensitive to the effects of ambient ethylene. Ethylene may cause yellowing of the leaves. Keeping the temperature low is usually sufficient protection against ethylene. However, celery should not be shipped in proximity to ethylene producing commodities.
Special Treatments Before Shipping: Celery should be rapidly cooled after harvest and then kept cold at all times. Maintenance of high humidity is very important.
Varietal Differences: No varietal differences in postharvest handling have been documented for celery.
Mixed Loads: Celery is sensitive to ethylene and so should not be shipped with commodities that produce ethylene.
Cautions: O2less than 1% can cause persistent off-flavors and off-odors. CO2greater than 10% can also cause off-flavors and off-odors as well as internal brown discoloration. The benefit from reduced O2 is slight and so is the risk of injury. Elevated CO2 is of some benefit, but then celery should not be shipped with head lettuce, which is sensitive to CO2. Wilting is a major cause of quality loss for celery so maintenance of high RH is essential.
