Special Treatments Before Shipping: Rapid cooling of apples is recommended. A stress treatment of 0.8% O2 for 10 days can benefit quality and reduce incidence of scald during subsequent storage.
Mixed Loads: Apples generate ethylene and so should not be shipped with ethylene-sensitive commodities such as kiwifruit, persimmin, carrots, celery, cabbage, lettuce, and some flowers and nursery plants. Apples may absorb aromas from onions, garlic, and other commodities that produce volatiles. Apples absorb off-flavors from potatoes.
Cautions: O2 less than 1% for more than 10 days can result in alcoholic off- flavors, ribbon scald and core browning. High CO2 (greater than 1% if O2 Ihan 1.5% or greater than 3% if O2 greater than 2%) can result in severe core flush.
