Optimum Relative Humidity: 90-95%
Benefits of CA: Helps retain firmness and acidity.
Benefits of Ethylene Removal: May help maintain firmness.
Special Treatments Before Shipping: Programmed storage with low O2 (1-1.5%) followed by higher O2 (2-3%) lessens risk of injury.
Mixed Loads: Apples generate ethylene and so should not be shipped with ethylene-sensitive commodities such as kiwifruit, persimmon, carrots, celery, cabbage, lettuce, and some flowers and nursery plants. Apples may absorb aromas from onions, garlic, and potatoes.
Cautions: Mcintosh apples from some countries are particularly prone to scald. Too low O2 can result in corky browning, skin discoloration, flesh browning and alcoholic off-flavors. High CO2 (greater than 5% continuously or greate than 15% for short periods) can cause core flush and CO2 injury. Mclntash apples are sensitive to low temperatures and can develop core flush if kept too cold. They may also develop ribbon scald in low O2.
